Ingredients
- One medium potato, washed and diced into bite sites pieces
- One small red onion, diced
- 2 Slices of lean ham, chopped up
- 1 tbsp of Light Mayonnaise
- 1 tbsp of Fat Free Balsamic Dressing
- 1 tsp mixed herbs
- 1 stock cube (chicken / veg, I used chicken)
- Mixed salad leaves (I used a bag of spinach, iceberg, lambs lettuce and sliced fresh beetroot)
- Cook the potatoes in boiling water with the stock cube until tender. Drain and allow to cool
- Mix the mayonnaise and dressing together.
- Once the potatoes have cooled, toss with the ham, herbs and onions and then toss in the dressing.
- Serve on a bed of lettuce leaves of your choosing
