Chocolate Vanilla and Raspberry Over Night Quinoa - 8SP Serves 1

Ingredients

40g Quinoa, uncooked and rinsed
2 tsp coco powder
30g Full fat Greek Yogurt (you can use 0% fage and adjust the points but I just didn't have any left!)
2 tablespoons zero sp homemade raspberry jam (adjust points if not homemade)
1 tsp Vanilla Extract
1 tsp sweet freedom chic shot 

Method

Add the quiona and coco powder to a pot with 80g boiling water and cook over a medium heat until all the water has absorbed and leave to cool.

Once cooled, mix the vanilla and yogurt through the quiona and add a layer to a glass jar. Then top with some jam and repeat until near the top

Add 1 tsp of choc shot and leave in the fridge over night

Serve with sliced banana

Baked Eggs with Smoked Salmon and Asparagus, 5 ProPoints, Serves 1


Ingredients 
4 Asparagus Spears
1 Egg
25g Smoked Salmon
4 Sprays of Low Cal Spray oil
Salt and Pepper

Method 

Heat the oven to 200 degrees

Cut the woody ends of the asparagus spears and put in a ceramic oven proof dish, spray with oil and season with pepper

Bake in the oven for about 5 mins, until becoming tender. Remove from the oven and crack the egg in the dish and place in the oven for approx 5 mins, until the whites have set and the yolk is paling.

Serve with 25g Smoked Salmon and a wedge of lemon

Wholemeal Tortilla Wraps - 3 ProPoints, Serves 16



Ingredients 

4 cup of wholemeal flour
1 cup warm water
1/4 tsp baking powder
Pinch of salt

Method 
Sift the flour, salt and baking powder together in a bowl
Gradually add the warm water until it all comes together in a soft dough
Split the dough into 16 pieces, cover and allow to rest for 20 mins
Roll the balls out into thin discs and cook on a dry frying pan until the top side begins to bubble, turn and repeat the process on the other side

Eggs in Hell Fire - 6 ProPoints Serves 1

Ingredients 

200g Passata
1 clove garlic
1 tsp dried basil
1/2 tsp chili flakes
Salt & Pepper
1 Egg
1 Aldi Multigrain Slim

Method 


  1. Heat the passata over a medium to high heat and add in the garlic, basil and chili flakes.  Season to taste. 
  2. Once the sauce has come to a boil, it must be hot enough to poach an egg, add in the egg and cover until it is cooked to your liking 
  3. Toast the bread 
  4. Pour into a bowl and serve
